Is it Scallops? Is it Oysters? No, it’s Mushrooms!

This is a replica of my Broiled Scallops recipe, with one exception: it’s totally vegetarian, made of king oyster mushrooms

INGREDIENTS

1 king oyster mushroom, sliced into 3/4-inch pieces

2 tbsp grated Parmesan cheese

1 1/2 tbsp bread crumbs

1 1/2 tbsp olive oil

1 tbsp thyme flakes

Seas salt and fresh-ground black pepper to taste

DIRECTIONS

Turn on broiler on oven

Place mushroom slices on scallop shells, two per shell

In a small bowl, mix the Parmesan, bread crumbs, oil, thyme flakes, salt& pepper and divide among scallops

Place the mushrooms on flat baking pan lined with aluminum foil (Use the bottom shelf of the oven)

Broil for 3-5 minutes

Serve warm

(Makes 3-4 servings)
